Mexican Quinoa Salad
What You’ll Need:
- 1 1/2 cups cooked quinoa 
- 1 cup chopped red cabbage 
- 1 red belle pepper, diced 
- 1 green belle pepper, diced 
- 1/2 red onion, diced 
- 2 roma tomatoes, diced 
- 1/2 can black beans, drained and rinsed 
- 1/2 cup corn 
- 1/4 cup chopped fresh cilantro 
- 1/2 tbsp minced garlic 
- salt and pepper to taste 
Dressing:
- 1 tsp chipotle chili powder 
- 1 tbsp olive oil 
- juice of 2 limes 
- 2 tsp honey 
How To:
- Add all of the chopped vegetables, quinoa, corn, black beans, cilantro, garlic, salt and pepper to a large bowl. 
- in a separate bowl, mix up the dressing ingredients until well combined and pour over the salad. 
- Mix everything together and enjoy plain or over some chopped romaine 
Note:
For more protein, add grilled chicken or shrimp!
