Greek Chickpea Salad
What You’ll Need:
- 1 green belle pepper 
- 1 red belle pepper 
- 2 roma tomatoes 
- 1 cucumber 
- 1 red onion 
- 1/4 cup katamala olives 
- 1 cup crumbled feta cheese 
- 1 can of chickpeas (drained and rinsed) 
- fresh mint leaves (optional) 
Dressing:
- juice of 1 lemon 
- 3 tbsp olive oil 
- 2 tsp garlic powder 
- 1 tsp oregano 
- salt and pepper to taste 
How To:
- Dice all of the fresh veggies and olives and add to a bowl with the chickpeas and feta cheese 
- In a separate bowl, mix the dressing ingredients. 
- Pour the dressing over the diced veggies and mix everything together. 
- Enjoy plain, or over a bed of greens.
