Sesame Cilantro Chicken
What You’ll Need
- i lb boneless skinless chicken breast
- Olive oil
- Salt and pepper
- Scallions
- White and black sesame seeds (optional)
- 1/4 cup fresh cilantro
- orange and or lime wedges for serving
Sauce:
- 1/4 cup low sodium Tamari or Coconut Aminos
- 4 tbsp sesame oil
- 1/2 tbsp rice vinegar
- 2 tbsp honey
- 1 tsp fresh or dried ginger
- 1 tsp minced garlic
- juice of 1 orange
- 1 tsp arrowroot starch
- salt and pepper to taste
How To:
- Season the chicken breast on both sides with salt and pepper
- Heat a pan on medium heat and add the olive oil
- Sear the chicken on both sides for 3-4 minutes or until the chicken is fully cooked (165ºF internally). Remove from heat and set aside
- While the chicken is cooking, make the sauce - add all ingredients to a small bowl and whisk until combined
- Add the sauce mixture to a small pan and bring to a low simmer, stirring occasionally until it thickens. Taste the sauce - if you like it sweeter, add more honey and stir to combine with the rest of the sauce
- Coat the fully cooked chicken in the finished sauce and serve topped with the cilantro, scallions, black and white sesame seeds and optional citrus wedges.
- Serve with roasted vegetables (broccoli or green beans) and rice or roasted sweet potatoes
