Bruschetta Chicken
What You’ll Need
- 1 lb boneless skinless chicken breast 
- 2 small roma tomatoes 
- 1/2 red onion 
- 1 tsp minced garlic (or 2 cloves minced/grated) 
- fresh or dried basil 
- 1 tbsp extra virgin olive oil 
- balsamic glaze (homemade or store bought) 
- mozzarella (optional) 
- salt and pepper to taste 
How To:
- Preheat your oven to 425ºF 
- Heat the olive oil in a skillet on medium high heat 
- Season the chicken on both sides with salt and pepper 
- Sear the chicken on both sides for 2 - 3 minutes, then remove from the pan and set in a greased baking dish 
- While the chicken is searing, dice the roma tomatoes and onion 
- After removing the chicken, add the tomatoes and onion to the pan and sauté for 1 -2 minutes 
- Add the tomatoes and onions to the chicken, then top with balsamic glaze and mozzarella 
- Bake for 15-20 minutes or until the cheese is melted and the chicken reaches 165ºF internally 
- Top with fresh basil and serve
