Sweet Potato Turkey Meatballs with Cranberry Glaze

What You’ll Need:

Meatballs:

  • 1 lb ground turkey

  • 1 cup cooked sweet potato puree (peel and cube one medium sweet potato. Add to a sauce pan and cover with water. Boil until soft, drain and mash)

  • 1/2 cup parmesan cheese

  • 1/2 cup breadcrumbs

  • 1 egg

  • 1 tbsp minced garlic

  • 1 tsp italian seasoning

  • salt ans pepper

Cranberry Glaze:

  • 2 cups rw cranberries

  • 1 tbsp honey

  • 1 cup water

  • fresh rosemary

  • fresh thyme

  • 1/4 tsp salt


 

How TO:

  1. Preheat oven to 425ºF

  2. Make the meatballs: Combine all ingredients in a bowl and mix until combined. Form into meatballs (this recipe makes about 40 small meatballs)

  3. Bake for 20-25 minutes until they reach 165º internally

  4. While the meatballs are cooking, make the cranberry glaze: Add all ingredients to a sauce pan, placing the fresh rosemary and thyme on top.

  5. Bring to a boil, then reduce heat and cover. Allow to simmer for 10 minutes.

  6. Next, remove the rosemary and thyme and discard. Transfer the mixture to a blender or food processor and blend until smooth

  7. Serve immediately. Top the meatballs with the cranberry glaze and enjoy with your favorite greens as a side - Green beans are a great option!
