Sweet Potato Turkey Meatballs with Cranberry Glaze
What You’ll Need:
Meatballs:
1 lb ground turkey
1 cup cooked sweet potato puree (peel and cube one medium sweet potato. Add to a sauce pan and cover with water. Boil until soft, drain and mash)
1/2 cup parmesan cheese
1/2 cup breadcrumbs
1 egg
1 tbsp minced garlic
1 tsp italian seasoning
salt ans pepper
Cranberry Glaze:
2 cups rw cranberries
1 tbsp honey
1 cup water
fresh rosemary
fresh thyme
1/4 tsp salt
How TO:
Preheat oven to 425ºF
Make the meatballs: Combine all ingredients in a bowl and mix until combined. Form into meatballs (this recipe makes about 40 small meatballs)
Bake for 20-25 minutes until they reach 165º internally
While the meatballs are cooking, make the cranberry glaze: Add all ingredients to a sauce pan, placing the fresh rosemary and thyme on top.
Bring to a boil, then reduce heat and cover. Allow to simmer for 10 minutes.
Next, remove the rosemary and thyme and discard. Transfer the mixture to a blender or food processor and blend until smooth
Serve immediately. Top the meatballs with the cranberry glaze and enjoy with your favorite greens as a side - Green beans are a great option!
